 Circa 10,000 BCE

**Traditional fermentation** uses microorganisms to process plant ingredients to produce products with unique flavor and nutritional profiles or textures.

 Since the 1970s

**Biomass fermentation** leverages the fast growth and high protein content of microorganisms. The microbial biomass itself is the final product

 Since the 2000s

**Precision fermentation** uses microbial hosts as “cell factories” to produce functional ingredients to improve the sensory and functional characteristics of plant-based products.

**Cell-based meats\***: stem cells from an animal are grown in bioreactors. Building on decades of accumulated knowledge from the biotechnology industries.

*\*A similar process can be used to produce milk, gelatin, egg and other components or end products.*

## Deliver on production and on speedmarket

Production processes require large amounts of **purified water** and are highly sensitive to **microbial contamination**, which can impact the **quality and quantity of the final product**.

**Purified water** is used to prepare the media feedstock, as make-up water for the bioreactors, as cooling water (sprayed within the bioreactors), for cleaning and rinsing of the bioreactors, and for purification of the final product.

There is pressure for manufacturers to scale quickly, but legislative and technical constraints require manufacturing pilots. These must be **online quickly**, and once objectives are met, rapidly scaled.

## Deliver on sustainability

Production processes require significant energy and water resources. **Renewable energy, [water reuse](/en/applications/reuse "Water reuse") and resource recovery** are essential for the industry to deliver on the **sustainability promises of alternative protein products.**

[**Wastewaters**](/en/applications/industrial-wastewater-treatment "Industrial wastewater treatment") **can be challenging** with high organic loads and variabilities in flow and composition due to batch production techniques.

Veolia designed and built a wastewater treatment plant for an alternative proteins manufacturer in France. It employs [**Biothane**](https://www.biothanesolutions.com/) technologies to convert 1500 m3/day of wastewater into biomethane for the grid. This equates to around 11 gigawatt hours of electricity per year.

From yeast and enzyme manufacturers, via wine and beer producers, to manufacturers of functional ingredients; **[Biothane](https://www.biothanesolutions.com/) has treated wastewater from fermentation industries for over 40 years and has hundreds of references**.

## FAQ about alternative proteins

### What is alternative protein?

**Alternative proteins** may be sourced from plants, insects, fungi, or through **cell-culture** to replace conventional animal-based sources.

### What are the process water treatments required for alternative protein manufacturers?

**Purified water** is used to prepare the media to be used as feedstock, as make-up water for the bioreactors, as cooling water, for cleaning and rinsing the bioreactors, and for purification of the final product. Microbial contamination of this water at any stage can have serious implications.

### What are the wastewater requirements for alternative protein manufacturers?

Wastewater from alternative protein production typically has high chemical oxygen demand (COD) and biochemical oxygen demand (BOD). Anaerobic treatment systems are well adapted for such wastewaters. They can be used to both treat the wastewater and generate valuable biogas, which can then be used as an alternative source of energy for the production facility. This results in lower energy costs, a smaller carbon footprint and greater self-sufficiency.
